Recipe for May Day Fritters "Tippaleivät" |
|
To prepare May Day Fritters you will need the following Ingredients:
For the Batter:
2 eggs, 2 tbs sugar, 1/2 tbs yeast, 3 dl milk, 4 dl flour, 1/2 tsp salt
For the Topping / Decoration:
Powdered sugar (icing sugar)
For Frying the May Day Fritters:
Frying butter or vegetable oil
May Day Fritters
Preparation Instructions:
Beat eggs and sugar lightly in a bowl. Dissolve yeast into lukewarm milk,
add salt and mix into smooth batter together with flour and egg mixture. Put
batter into cornet or piping bag with small-holed nozzle. Heat oil or frying
butter to 190 degrees C in a deep fryer or heavy bottomed deep pot. Put a
steel soup ladle half-filled into hot oil or butter. Run batter into a steel
ladle with back and forth motion, so that sparse lattice pattern is formed.
Turn once until golden. Drain on paper towels. Before serving, dust with
powdered sugar. |

Finnish
Recipe for Mead "Sima" |
|
To prepare Finnish Mead (called Sima in Finnish) you will need the following Ingredients:
8 litres water, 400g brown sugar, 400g sugar, 2dl syrup (molasses), 3 lemons, 1/4 tsp yeast, raisins

Preparation Instructions:
Boil 4 litres of water. Place the sugars and syrup into a bucket and pour boiling
water on them. Stir until dissolved. Wash lemons carefully and cut into
slices. Pour the rest of water (cold) into a bucket. When water is lukewarm,
add yeast and lemon slices. Ferment until next day at room temperature. Put
1tbs of sugar and few raisins into clean bottles. Strain and bottle mead. Cork
the bottles lightly and store in a cool place. Mead is ready after 2-3 days,
when raisins rise to the surface. |
