6 portions
For broth:
approximately 1 kg beef for soup (naudan keittoliha) 2 liters water 2 onions a piece of leak 2 carrots a piece of parsnip a piece of celeriac a piece of rutabaga / turnip 2 tsp salt 1 tsp all spice 2 laurel leaves
For soup:
broth from the boiled meat a few black peppers 2 carrots a piece of celeriac a piece of parsnip a piece of rutabaga / turnip 6 potatoes diced cooked beef 3 tbs shredded parsley

Recipe Cooking and Preparation Method |
|
Pour 2 liters of water into a large saucepan and bring the water to a boil. Add the beef and bring to a boil again. Remove the foam with a slotted spoon. Boil until the beef stops foaming and then add the seasonings and the peeled and diced vegetables. Simmer at a low heat for approximately 1 ½ hours, until the meat is cooked.
When the meat is cooked, remove it from the saucepan with a slotted spoon and strain the broth. Bring the broth to a boil and add the peeled and diced vegetables and the seasonings. Boil for a few minutes and then add the peeled and diced potatoes to the saucepan. Simmer for approximately 20 minutes and then add the diced beef and shredded parsley to the saucepan. Heat up and check the taste, add some salt if needed. |
