Brown the butter in a saucepan. Add the sugar, stir, and set aside to cool. Mix together the flour, vanilla sugar and baking powder, and add to the butter-sugar mixture.
Take some batter with a tablespoon and smooth out into a spoon-shaped cookie. Turn the cookies gently onto a baking tray, which is covered with a greaseproof paper. Bake at 175 degrees Celsius for approximately 15 minutes, until light golden brown. Set aside to cool for a while.
Spread marmalade on half of the cookies, and press the other half gently on top of them. Roll the cookies in sugar and place them on a serving dish. |
